The agave for Don Julio's Tequila is grown in the highland area of Atotonilco on the family estate. Tequila's major aging process over time takes place in conjunction with the development of agave plants, given that they take seven years to reach maturity. Every agave plant is harvested by hand.

Chablis is a region in Northern Burgundy. What makes wines from this region so different is that the Chardonnay wines are aged primarily in tanks or very well-used oak barrels. The lack of new wood reduces the vanilla, toffee, and sweet-“ish” flavors typically associated with Chardonnay. Chablis are wines with more flintily and leaner/greener fruit flavors.
