Blanc de Blancs Champagne
Blanc de Blancs, meaning white of whites, refers to Champagnes made only from white grapes, most commonly Chardonnay. The vineyards of Le Mesnil-sur-Oger, located in the Côte de Blancs yield the best examples of the style. A classic Blanc de Blancs is restrained and elegant when young, yet with ageing it develops a mouth-coating richness of cream and brioche with an intense fruitiness that is the hallmark of these sublime wines.

Rosé Champagne
The color in rosé Champagne usually comes from adding a little Pinot Noir to an existing white cuvée. It typically has red-fruit aromas like strawberries and raspberries with a subtle yeasty character resulting from extended lees contact and exposure to the Pinot grape skins. Rosé Champagne is versatile; its fuller flavor and body enable it to cope with stronger food flavors and textures.

Vintage Champagne has all the ingredients of a world-class wine - better vineyards and longer aging, just to start. This helps create a wine that has more nuance, greater layering of flavor, increased complexity and greater aging potential than its non-vintage counterpart. Vintage wines only account for about 7% of Champagne production.

Often considered the most versatile varietal on the planet, Chenin Blanc grows in almost any climate and produces wines ranging from bone-dry to some of the most illustrious dessert wines in existence.

Three of the primary grapes of the Rhône, Viognier, Roussanne and Marsanne are intensely aromatic and full of texture. Grenache Blanc tends to be lighter and fairly neutral with crisp acid & high sugars. These wines tend to show flavors of spice, nut, honeysuckle and green apple.

Chardonnay
Chardonnay produces some of the fullest bodied white wines. Although when planted in urgundy, its original home, it produces a leaner style - think Twiggy vs. Jane Russell with the later representing the full-bodied California styles. The climate in urgundy is the biggest variable, which is much cooler than in the Chardonnay zones of the New World. This region is home to the original Chardonnay and the wines are frequently considered to be the inspiration for all Chardonnays produced worldwide, and among the most elegant and balanced of all. Le Montrachet was – and still is – considered the greatest white wine produced in France. “It should be drunk,” Alexander Dumas said a century ago, “on one’s knees with hat in hand.” It is fortunate there is more to white urgundy than Montrachet. From the simple but appealing wines of Mâcon and Pouilly, produced in the southernmost part of urgundy, to the elegant, flinty whites of Chablis in the far north, there is something for everyone.

regon's Willamette (pronounced will-LAAM-ette) Valley, home to over 300 wineries, is a destination for world-class pinot noir; a noteworthy accomplishment given its relatively brief history of winemaking. In the early 1970's, with only 5 wineries, this region's cool climate attracted the attention of wine mavericks like Dick Erath, Susan and ill Sokol-losser, and David and Ginny Adelsheim. At the same northerly latitude as urgundy, the cradle of pinot noir, Willamette Valley is ideal for this fickle grape. The rolling hills provide slopes to amplify the sun's warmth, ripening the grapes with bright fruit and complexity. These conditions enable the wines to strike the perfect balance between the earthier urgundian style and the lusciously-fruity California style. y the 1980's, regon had already begun to garnish international acclaim at wine competitions. With an eye on the prize, industry greats like Joseph Drouhin, a top urgundian producer, started Domain Drouhin while Robert Parker, the world's most well-known wine critic, laid the foundations for eaux Freres Winery. Although “Willamette Valley Pinot Noir” is an ace in regon's back pocket, its winemakers have recently begun to show their hands, revealing that regon will no longer be defined by one grape or one region. Whether it's a new chardonnay clone or the multitude of emerging regions and sub-regions, regon has been an exciting region to watch.

Spanish wine is enjoying a surge in international popularity it has never known before. Spain has more land under vine than any country in the world, but many of the growing conditions are so extreme, Spain is the third largest producer by volume behind France and Italy. Much of the land is barren and dry resulting in very low yields, yet very high quality. The two major red grapes are Tempranillo, known for producing long-lived wines with moderate acidity and aromas of spice, chalk and cherries, often fattened by a hefty use of oak and Garnacha, known as Grenache in the rest of the world. .

Garnacha, Monastrell, Mencia
Priorat is located in Catalonia, near Barcelona. Garnacha is the primary grape, but Cariñena is a close second. Jumilla, situated between Castile-La Mancha and Murcia in southeastern Spain, is the prime growing region for Monastrell--known elsewhere as Mourvèdre. Adding to their international appeal, these wines frequently have Cabernet Sauvignon and Merlot in the blend. The volcanic terroir produces big, juicy, dense wines that are full of character. Mencia is grown in the Bierzo region in northwestern Spain, and it tends to produce wines that are softer and more fragrant than their southern counterparts.

Tempranillo
Rioja is the most famous red wine of Spain and arguably one of the best. The wines are Tempranillo based producing two distinct styles, one steeped in tradition and the other offering a more New World style. Ribera del Duero is on par with Rioja for its quality of red wines. Even though Tempranillo is the major grape here, Cabernet Sauvignon, Merlot and Malbec are permitted in the blends. Add a good amount of American oak and the resulting wines are perfect for a California wine drinker. Located in Eastern Spain, in the heart of Castilla y Leon, there is evidence wine has been made in Toro since the first century BC. Toro means bull in Spanish and these wines live up to that name. They are dark and extracted with concentrated fruit and hefty tannins. La Mancha is the largest continuous vine-growing area in the world and produces a wide array of wines.

Chateauneuf-du-Pape
Literally translated as, “New Castle of the Pope,” this region, in the Southern Rhône Valley, is firmly entwined with papal history. In 1308, Pope Clement V, former Archbishop of ordeaux, relocated the papacy to the city of Avignon. Clement V and subsequent "Avignon Popes" were said to be great lovers of wine and did much to promote it during the seventy-year duration of the Avignon Papacy. Clement V was succeeded by John II, who did much to improve viticultural practices there. Under John II, the wines of this area came to be known as "Vin du Pape"; this term later became Châteauneuf-du-Pape. John II is also responsible for erecting the famous castle that stands as a symbol for the appellation. Châteauneuf-du-Pape permits thirteen different varieties of grape; the red blend is usually predominantly Grenache, producing a sweet juice that can have almost a jam-like consistency when very ripe. Syrah is typically blended to provide color and spice, while Mourvèdre can add elegance and structure. Châteauneuf-du-Pape red wines are often described as earthy with gamey flavors that have hints of tar and leather. The wines are considered tough and tannic in their youth, but maintain their rich spiciness as they age.

The Mondavi Legacy
No single family has been more influential in the American wine industry than the Mondavis. The family's formal entrance into the wine business began in 1943, when Cesare and Rosa Mondavi purchased the Charles Krug Winery for their sons, Peter and Robert, to run. In 1966, Robert harvested the first grapes from his own To Kalon Vineyard, thus beginning the Robert Mondavi Winery. Among great New World wine pioneers, Robert is an undeniable icon. With his passion for excellence, astute creativity and tireless innovation, he led a renaissance in California fine wine. Furthermore, his now legendary partnership with aron Philippe de Rothschild, gave us "pus ne," a landmark venture that has become known as America's first ultra-premium wine. At the Charles Krug Winery, Peter Mondavi has been a pioneer in his own right. In 1963, he introduced French oak barrels to age wines, citing their superior quality to the American oak popular at that time. He also introduced the use of glass-lined tanks to gain more control over the winemaking process, and his winery was among the first California producers to label wines by varietal. Tim Mondavi has carried on the family tradition, picking up the torch from his father, Robert, and uncle, Peter. After leading the winemaking at Robert Mondavi Winery for 30 years, Tim founded Continuum in 2005, to pursue his own vision of making a single estate grown wine worthy of being in the company of the world's finest.
